  • Chicken fillet – 2 pcs. (800 g)
  • Kefir – 100 ml
  • Soy sauce – 1 tbsp
  • Garlic – 2 cloves
  • BBQ sauce – 1 tbsp
  • Ground paprika – 1 teaspoon
  • Ground coriander – 1 teaspoon
  • Salt to taste
  • Vegetable oil – 2 tbsp
  • Ground hot pepper (optional) – to taste

Chicken Kebab on Skewers, in Kefir Marinade (in a Pan) Instructions

  1. Slice each chicken fillet into thin cutlets.
  2. Place cutlets between plastic wrap and pound gently with a meat mallet to even out thickness.
  3. Cut the pounded chicken into long strips.
  4. Press or mince the 2 garlic cloves, then combine in a bowl with paprika, coriander, soy sauce, BBQ sauce, salt, and ground hot pepper (if using).
  5. Add chicken strips and kefir to the marinade, mix well, cover, and refrigerate for 1–2 hours.
  6. While marinating, soak wooden or bamboo skewers in water for 2 hours.
  7. Thread 1–2 strips of marinated chicken onto each skewer.
  8. Heat 2 tablespoons of vegetable oil in a large frying pan over medium-high heat until shimmering.
  9. Place kebab skewers in the pan and cook for 5 minutes, then flip and cook for another 5 minutes until cooked through.
  10. Optional: Transfer to a preheated oven at 200°C (400°F) for 2–3 minutes to finish cooking.
