Chicken Snack Cake with Cheese, Pickled Cucumbers and Olives

Making a chicken fillet snack cake is easy. You will certainly appreciate its spicy and bright taste. Ingredients

For pancakes:

  • Chicken fillet – 400 g
  • Kefir 2.5% – 350-400 ml
  • Eggs – 2 pcs.
  • Wheat flour – 70 g
  • Vegetable oil – 20 ml
  • Baking powder – 1 teaspoon
  • Salt – 1 teaspoon
  • Ground black pepper – to taste
  • Ground nutmeg – ½ teaspoon

For filling:

  • Processed cheese – 150 g
  • Pickled cucumbers – 150 g
  • Olives – 15 pcs.
  • Mayonnaise – 200 g
  • Dill greens – 2-3 branches
  • Parsley – 2-3 sprigs
  • Green onion – 2 branches
  • Garlic – 2 cloves

For decoration (optional):

  • Dill greens – to taste
  • Cranberry – to taste

Directions

  1. We prepare products for making a snack cake.
  2. Thoroughly wash the chicken fillet and cut into large random pieces.
  3. Put the fillets in a blender bowl, add salt, pepper and nutmeg.
  4. Grind until smooth.
  5. Add eggs, flour, baking powder and kefir to the minced meat in the blender bowl. We interrupt in a blender until smooth.
  6. Here is a dough of medium thickness.
  7. For frying pancakes, I use a frying pan with a diameter of 20 cm. Preheat the pan and grease with vegetable oil. Pour 2-3 tablespoon into a frying pan. spoons of dough, spreading it over the entire bottom. Fry the pancake for 2-3 minutes on each side. We do this with the whole test. Before each pancake, grease the pan with vegetable oil.

  10. Rub the olives on a coarse grater.
  11. Rub the cheese on a fine grater.
  12. Finely chop the greens. Peel the garlic and pass it through a press.
  13. We combine mayonnaise, cheese, herbs, olives, pickled cucumbers and garlic. We mix.
  14. We collect the cake. Put the first pancake on a flat plate and grease with the filling.
  15. We do this with all the cakes and filling.
  16. We also grease the last cake with the filling. Decorate the pancake cake with chopped dill and cranberries.
