Ingredients

  • 200 g chicken breast
  • 2 bunches soup greens (carrot, celery, leek, parsley), cleaned
  • 200 g cauliflower
  • 1 onion (s), red
  • some sage, dr.
  • some thyme, sep.
  • 2 bay leaves
  • some stalks chives
  • 150 g soup noodles (letter noodles)
  • salt and pepper

Instructions

  1. Fill a saucepan with a good 1 liter of water.
  2. Place the chicken breast, onion, 1 carrot, 1 piece of celery and the two bay leaves in the saucepan. Salt the water well and try if it is salty enough. Cook for 20 minutes. Then take everything out and discard the onion and bay leaves.
  3. Chop the other raw carrot and celery pieces as well as the cauliflower into bite-sized pieces, add to the boiling broth and cook for 10 minutes. Cut the leek into small pieces, add and cook for 1 min.
  4. Meanwhile, cook the letter noodles in a second pot in fresh salted water according to the instructions on the packet.
  5. Cut the initially cooked vegetables and meat into bite-sized pieces and add to the soup. Chop the parsley and chives and add with the pasta. Season to taste with sage, thyme, salt and pepper.
