Chicken Terrine with Cranberries and Cheese Ingredients

  • Chicken liver – 300 g
  • Chicken legs (pulp) – 300 g
  • Chicken fillet – 2 pcs.
  • Dried cranberries – 100 g
  • Cognac – 40 ml
  • Bulb onions – 2 pcs.
  • Eggs – 2 pcs.
  • Cream 20% – 200 ml
  • Hard cheese – 150 g
  • Fresh thyme – to taste
  • Dried oregano – 1 teaspoon
  • Garlic – 2 cloves
  • Salt – 1-2 teaspoon
  • Vegetable oil – for frying

Chicken Terrine with Cranberries and Cheese Instructions

  1. Cranberries need to be poured with cognac for 30 minutes in advance.
  2. Remove the bones from the chicken legs, remove the skin from the fillet. Cut half of the resulting fillet into thin strips (take the fattest part of the legs).

  3. We twist the remaining meat from the legs through a meat grinder along with the chicken breast. Combine meat, cut into strips, with minced meat. Cut the onion into small cubes. We wash the liver, remove the films, and cut them into medium pieces.
  4. Fry the onions in a pan with vegetable oil until light golden brown.
  5. As soon as the onion is golden, add the liver to it. Fry for 2-3 minutes, so that the liver just “grabs” and remains juicy inside. Cut the cheese into large cubes.
  6. We take a larger cup, it will be more convenient to mix everything. We combine chicken meat, fried liver with onions, and cheese.
  7. Add the cranberries along with the cognac. eggs, oregano, thyme, salt, and minced garlic. Pour in the cream.

  8. We mix everything well and layout in forms. For this recipe, I bought rectangular aluminum molds measuring 22×11 cm and a height of 5.7 cm. The meat mass was enough for exactly two molds.
  9. We put the filled forms into a large deep mold, into which we pour boiling water (the water level should reach 2/3 of the forms with meat). We bake chicken terrines in the oven at 180 degrees for 2 hours. But watch the process, as all ovens are different. For example, terrine in my oven was baked for less than an hour and a half.
  10. After baking, let the chicken terrines cool to room temperature and refrigerate at least overnight. Then turn over the chicken terrines with cranberries and cheese on a plate, release them from the shape. Meat bliss with cheese and pleasant sourness of cranberries! Cook for health!
