Ingredients

  • 3 bone-in chicken breast fillet (s)
  • 50 g ham (Knofischinken), air-dried
  • 6 cloves garlic
  • 3 tablespoon oil (olive oil)
  • 2 bay leaves
  • 1 sprig rosemary
  • 2 tablespoon honey
  • 3 tablespoon dark balsamic vinegar
  • 250 g mushrooms

Instructions

  1. Slice the ham and fry in the oil with the garlic sticks. Add herbs, roast, remove everything. Sear the chicken pieces in the remaining frying stock, add a little more oil if necessary. Mix the honey and vinegar, brush the meat with them, add the bacon mixture again and stew at a low temperature for 1 hour. Turn and brush over and over again. Now and then add a little water - as required. 20 minutes before the end of the cooking time, add the mushrooms in quarters. Season the sauce with pepper. Serve everything in the roasting pan, or release the chicken fillets and serve as a plate portion free of bones.
