Childhood Macaroons

Classic macaroons “from childhood”.

Ingredients

  • Almonds – 120 g
  • Flour – 30 g
  • Egg white – 3 pcs. (about 100 g)
  • Sugar – 230 g (or to taste)
  • Additionally (for parchment or foil):
  • Butter – 20 g
  • Flour – 20-30 g

Directions

  1. Do not brown or peel almonds. Grind immediately into crumbs.
  2. Add sugar, stir. I added less sugar than in the recipe (it is very sweet).
  3. Add proteins.
  4. Mix well, you can use a mixer or blender, about half a minute.
  5. Put on very low heat (you can use a water bath). While stirring, bring to a temperature of 30-40 degrees (i.e. approximately body temperature). The sugar should dissolve.
  6. Add flour and mix well again. The consistency of the dough is like a pancake.
  7. Turn on the oven (preheat to 190 degrees). Cover the baking sheet with parchment or foil. Grease parchment or foil with oil, lightly sprinkle with flour. Spread the dough with a spoon, or better – from a pastry bag. The cookies spread during baking, so leave enough space between them. The approximate dia of the cake is 5 cm.
  8. We bake almond cookies at a temperature of 190 degrees for 15-17 minutes. Time depends on the characteristics of the oven, watch out for the cookies, my first portion was ready in 7 minutes!
