Ingredients

  • 500 g chicken breast fillet (s) (alternatively beef, turkey, pork)
  • 1 can pineapple, cut into pieces
  • 1 jar bamboo shoot (s)
  • 350 g sprouts (bean sprouts), fresh or from the lass
  • 1 large red pepper (s)
  • 4 spring onion (s)
  • 4 medium carrot (s)
  • 4 cloves garlic
  • 2 tablespoons oil
  • 1 chilli pepper (s), red, dried
  • soy sauce
  • Spice mixture (Chinese spice)
  • possibly ginger
  • possibly coriander
  • possibly Sambal Oelek to taste

Instructions

  1. Drain the pineapple and collect the juice. In a bowl, mix roughly 8 tablespoons soy sauce, roughly 6 tablespoons pineapple juice, and the 2 tablespoons oil. Wash, dry, and cut the chicken into finger-thick strips. Place the chicken in a container, pour the marinade over it, cover, and refrigerate for at least 1 hour (longer for more flavor). Optional: add the dried red chili pepper to the marinade for extra heat.
  2. Drain the bamboo shoots. Wash the bean sprouts or drain them from their liquid.
  3. Wash and clean the red pepper, cut into strips, then cut diagonally into roughly 1 cm pieces. Peel the carrots and slice them diagonally. Wash the spring onions and cut them into roughly 1 cm pieces. Finely dice the garlic cloves.
  4. Remove the chicken from the marinade and drain well, reserving the marinade. Heat a wok or large pot over medium-high heat. Fry the chicken in portions for 3-4 minutes per batch until golden and the internal temperature reaches 74°C / 165°F, then push to the side (or remove and set aside if using a pot).
  5. In the same wok or pot, sear the pepper, carrots, and spring onions for 2-3 minutes over medium-high heat. Deglaze the pan with the reserved marinade. Add the bamboo shoots and garlic, and simmer over medium heat for 5 minutes.
  6. Add the cooked chicken back to the wok or pot along with the pineapple pieces and bean sprouts. Heat through for 1-2 minutes. Season to taste with the Chinese spice mixture, soy sauce, and chili powder. Add Sambal Oelek if desired for extra heat.
  7. Serve over cooked long grain or basmati rice.
