Ingredients

  • 1 Chinese cabbage (not too big)
  • 1 duck breast, with skin
  • 3 orange (s) (or grapefruit)
  • 150 g rapes, blue
  • 1 glass salad cream (with yogurt)
  • 2 tablespoon sherry, medium
  • 2 tablespoons oil
  • salt and pepper

Instructions

  1. Halve the Chinese cabbage, cut off the thick end. Then cut lengthways into strips and then across into cubes. Wash and drain (better spin dry).
  2. Slightly scratch the duck breast on the skin side, first fry in the hot oil on the skin side until it yields slightly to the pressure (then it is still pink on the inside). Depending on the size, takes about 15 minutes.
  3. In the meantime, peel and fillet oranges (best with a sharp knife; cut along the sides of the skin). Make sure to collect the juice! Wash grapes.
  4. For the dressing, put the salad cream in a bowl, stir together the orange juice, sherry, salt & pepper, season to taste. When the duck breast is ready, let it rest in aluminum foil for a few minutes. Then arrange the ingredients on beautiful large plates. Finally, cut the duck breast into slices and add to the salad.
  5. A great meal for a romantic evening for two.
