Ingredients

  • 250 g Chinese e noodles (Mie)
  • 200 g minced pork
  • 50 g mushrooms (Shiitake), dried
  • 30 g bean sprouts
  • 25 g chives, Chinese arlic chives
  • 2 tablespoon sauce (hoisin)
  • 0.25 ¼ cucumber (s)
  • 300 ml chicken broth
  • 4 teaspoon soy sauce
  • 2 teaspoons red wine
  • 2 teaspoons sugar
  • pepper
  • possibly sauce thickener
  • oil

Instructions

  1. Soak the dried Shiitake mushrooms in water for about 1 hour. This step is not necessary for fresh mushrooms.
  2. Roughly dice or cut the mushrooms and garlic chives. Put the bean sprouts in boiling water for about 30 seconds and set aside. Cut the cucumber into thin strips approx. 5 cm long.
  3. Heat the pan and fry the minced meat in a little oil until crumbly. Then add the hoisin sauce and mix. Add the mushrooms and garlic chives and fry together until the mushrooms are also well seared. In the meantime, mix the chicken broth with soy sauce, wine, sugar and pepper and add to the pan. Let it simmer for a few minutes and in the meantime prepare the pasta according to the instructions on the packet. If the sauce is too runny, thicken it a little with a sauce thickener. To taste.
  4. Then serve the pasta with the sauce and garnish with the cucumber and bean sprouts.
