Be sure to prepare a chocolate biscuit with cherries. An incredibly delicious combination of cherries and chocolate will definitely suit your taste!
Ingredients
For the test:
Flour – 1 glass
Cocoa powder – 2 tbsp
Sugar – 2 tbsp
Salt – 1/2 teaspoon
Butter (cold) – 50 g
Vegetable oil – 2 tbsp
Ice water – 3-4 tbsp
For filling:
Pitted frozen cherries – 1.5 cups
Sugar – 1-2 tbsp
Corn starch – 1/2 tbsp
Lemon juice – 1 teaspoon
Powdered sugar (for serving) – 1 tbsp
Directions
Pre-defrost cherries.
Let’s start making shortbread dough. In my opinion, the easiest way to prepare it is with a food processor, as the whole process takes 1-2 minutes. But you can also knead by hand.
Pour flour, cocoa, sugar, and salt into the bowl of the food processor. We mix.
Add cold butter and vegetable oil.
Grind into crumbs. Then add ice water a little at a time (literally in a spoon).
As soon as the dough has gathered in a ball, you’re done!
Put the dough in a bag or wrap it in plastic wrap and place it in the refrigerator for an hour.
An hour later, turn on the oven to heat up to 200 degrees. Cooking the filling.
We put the cherries in a colander to drain the excess juice. Add lemon juice, sugar, and cornstarch to it.
We mix.
We take the dough out of the refrigerator and roll it out on parchment paper in a circle.
We spread the filling retreating from the edge a few centimeters.
We wrap the edges towards the center of the biscuit. We send to the oven for 30-35 minutes.
We take the biscuit out of the oven and let it cool.
Sprinkle with powdered sugar on top before serving.
