For the chocolate mousse:
- Butter – 200 g
- Dark chocolate – 480 g
- Cocoa powder – 2 tbsp
- Egg whites – 460 g
- For the custard:
- Milk – 200 ml
- Egg yolks – 6 pcs.
- Powdered sugar – 100 g
- Vanilla in pods – 2 pcs.
- Mascarpone cheese – 1 tbsp
Directions
- Bring water to a boil in a medium saucepan.
- Place the dark chocolate and cocoa powder in a metal bowl and melt by placing the bowl over the boiling water in a saucepan.

- Remove from heat and whisk the chocolate and egg whites until you get a smooth consistency.
- Grate one vanilla stick. Combine milk, sugar, vanilla stick, and vanilla shavings together and heat the mixture in a medium saucepan.
- Whisk the egg yolks in a separate bowl.
- Remove the vanilla pod from the mixture and add the beaten egg yolks to the mixture.
- Reduce heat and stir mixture in saucepan until thickened. Remove from heat and let cool.
- Preheat oven to 180 degrees.
- Pour one ladle of chocolate mousse into a separate saucepan (ovenproof dish).
- Place the pot in the oven and bake at 180 degrees (it is important that the mousse is baked on the outside, but liquid on the inside).
- Add a tablespoon of mascarpone cheese to the custard while the mousse is baking.
- Remove the mousse from the oven, top with the custard and sprinkle with cocoa powder.
Bon Appetit!
