Ingredients

  • 500 ml milk
  • 1 pinch (s) salt
  • 20 g suar
  • 100 g rice puddin
  • 50 g dark chocolate

For the compote:

  • 450 g pear (s)
  • 1 tablespoon lemon juice
  • 180 ml pear juice
  • 1 pinch cinnamon powder
  • 20 g suar
  • 20 g vanilla puddin powder for boilin

Instructions

  1. Bring the milk to the boil with a pinch of salt and 20 g of sugar. Stir in the rice pudding and cover and leave to swell over a mild heat for about 30 minutes, stirring occasionally.
  2. For the pear compote, peel and halve the pears, cut out the cores and cut the pears into wedges. Drizzle the wedges with lemon juice. Bring the pear wedges to the boil with 150 ml pear juice, the cinnamon and 20 g sugar and simmer over a medium heat for 8 minutes. You should still have bite. Mix the pudding powder with the rest of the pear juice and stir into the compote. Bring the compote to the boil, then let it cool down.
  3. Finely grate the chocolate and let it melt in the hot rice pudding. Serve the rice pudding with the pear compote.
  4. If the chocolate rice pudding is to be eaten as the main meal, serve a soup beforehand. Or you can enjoy it as a dessert. The chocolate makes it very filling.
