And again about the biscuit, and again about the rolls !! Today I have a roll of chocolate sponge cake with chocolate cream. True, as such, there is no chocolate in it, only cocoa, and, of course, Christmas trees)) Still wondering what to cook for the new year 2021? Photo recipes will always come in handy.
Ingredients
Biscuit:
Eggs – 3 pcs.
Sugar – 60 g
Flour – 70 g
Cocoa – 25 g
Cream:
Butter – 100 g
Condensed milk – 80 g
Cocoa – 20 g
Almonds – 10 nuts (optional)
Cognac – 1 tablespoon.
Decoration:
Powdered sugar – 2 teaspoon
Chocolate – 20 g
Directions
Separate the whites from the yolks. Whisk the whites with half the sugar until stable peaks. Whisk the yolks with the remaining sugar into the cream. Gently combine the whites with the yolks. Sift the flour with cocoa and stir in small portions into the egg mass. Preheat the oven to 180C. Cover a baking sheet with parchment, pour the dough evenly, about 0.5 cm thick. Smooth. Bake for 10-13 minutes
Turn the finished biscuit on a clean towel, remove the parchment from it and wrap it in a roll with a towel. Cool completely.
For the cream. Beat the butter at room temperature until white. While whisking, add the condensed milk. Set aside 1 tablespoon. white cream (for decoration). Now add cocoa, beat. At the end, add a spoonful of brandy, beat again. Add chopped almonds if desired, stir.
Unfold the biscuit, spread with cream. Departing from the edges about 0.5 cm.
Roll up roll. Coat with the remaining cream. Sprinkle with powdered sugar using a strainer
Decorate as desired (I have chocolate trees, for more my meager imagination was not enough) and put in the refrigerator for 1.5-2 hours.
