Ground lamb is grilled and served with pita bread and a light, simple sauce of yogurt, cucumber, and pistachio.

Ingredients
Young lamb (lamb) ground – 700 g
Chopped garlic – 3 cloves
Fresh mint, chopped – 1 tbsp
Fresh parsley, chopped – 1 tbsp
Ground zira – ½ teaspoon.
Ground coriander – ½ teaspoon.
Ground black pepper – ¼ teaspoon.
Salt – ¼ teaspoon
Yogurt and cucumber sauce
Small pits – 5 pcs.
For garnish: cucumber, pistachios, fresh mint
Sauce:
Natural yogurt, thick, no additives (Greek) – 2 glasses
Peeled cucumber, seedless, cut into small cubes – 2/3 cup
Pistachios, finely chopped – ¼ cup
Chopped cilantro – 1 tbsp
Salt – ½ teaspoon.
Ground red pepper – ¼ teaspoon.
(Stir all sauce ingredients, cover and refrigerate)
Directions
Combine minced meat with garlic, mint, parsley, cumin, coriander, pepper, and salt.
Make 5 cutlets from the minced meat. Preheat the grill to 175-200 degrees. Spray your grill grate with non-stick, fire-resistant cooking spray.
Grill the patties for 7-8 minutes on each side. Place yogurt sauce and lamb steak on each pita. Decorate with cucumber slices, pistachios, and mint leaves.
