Instructions

  1. Heat the water with butter and salt in a saucepan until the butter has melted and the mixture boils. Remove from heat, immediately stir in the flour vigorously with a wooden spoon. Stir until the dumpling loosens from the edge of the pan.
  2. Allow to cool slightly. Then, stirring vigorously with the hand mixer, work in the eggs one by one until a smooth, silky, sprayable dough is formed, which must be placed on the tray and baked immediately. This mass can then be used to make eclairs and cream puffs.
  3. The dough is then baked in a preheated oven at approx. 200 ° C for about 40 minutes. Then let the pastries cool down on the wire rack. The cold pastries can be filled with either sweet or savory as desired.
