Ingredients

  • 500 g flour, (whole spelled flour)
  • 1 pack dry yeast
  • 350 g water, lukewarm, approx.
  • 10 g sea salt, coarse
  • 1 tablespoon maple syrup
  • 1 tablespoon oil, (rapeseed oil)

For painting:

  • 1 egg yolk
  • 1 tablespoon water
  • 1 teaspoon oil, (rapeseed oil)
  • Poppy
  • sesame
  • Sunflower seeds
  • Pumpkin seeds

Instructions

  1. Mix the wholemeal spelled flour with the dry yeast in a bowl. Gradually add the water, maple syrup and rapeseed oil and knead the dough thoroughly (this takes a few minutes !!!). Finally knead in the salt.
  2. Dust with a little flour and cover and let rise for approx. 1-2 hours (avoid draft!). This can be done at room temperature, the longer you let the dough rise, the better it will be.
  3. Then knock off the dough (with your fist in the middle!) And knead again properly.
  4. Divide the dough into 8 parts and form a roll from each part. Place on a baking sheet lined with baking paper and cover again for at least 30 minutes.
  5. Preheat the oven to 225 ° C top and bottom heat.
  6. Brush the egg yolks with water and rapeseed oil using a cake fork and brush the dough pieces all over. Sprinkle with seeds or seeds as desired and put in the oven. Bake ready in about 30 minutes. Then let it cool down properly and just enjoy.
