Christmas Cupcake with Poppy Seeds

Christmas pastries are always bright, aromatic, elegant and, of course, delicious. Here is one of the simple recipes for a rather unusual Christmas cake with poppy seeds.
Ingredients
- Flour – 180 g
- Poppy – 160 g
- Eggs – 5 pcs.
- Butter – 150 g
- Sugar – 180 g
- Walnuts – 100 g
- Raisins – 100 g
- Lemon (zest) – 1 pc.
- Cognac or rum (optional) – 20 ml
- Baking dough – 2 teaspoon
- Vanilla sugar – 1 teaspoon
- Salt – 1 pinch
* - For glaze:
- Chocolate – 70 g
- Vegetable oil – 20 ml
Directions
- Prepare the ingredients for the poppy seed Christmas cake. Grate the lemon zest on a fine grater.
Rinse the raisins and soak in warm water for half an hour. - Mix flour with poppy seeds and baking powder. Preheat the oven to 175 ° C. Prepare a muffin baking dish.
- Chop the nuts with a knife or in a blender.
- Drain the soaked raisins and pat dry with a paper towel.
- Stir the raisins with 0.5 tablespoon. tablespoons of flour. Melt the butter.
- Beat eggs with sugar, vanilla sugar and salt, using a mixer.
- Reduce the speed of the mixer to minimum and add the mixture of flour and poppy seeds to the egg mass by spoon. Continuing to stir the dough with a mixer, carefully add the melted butter. Then add lemon zest, cognac (optional), nuts and raisins. Stir the dough with a spoon.
- Pour the finished cake dough into a mold.
- Bake the poppy seed cake in a preheated oven for about 40-50 minutes at 175 ° C. Let the finished cake cool completely.
- Prepare ingredients for making chocolate icing.
- Melt chocolate and mix with vegetable oil. The glaze is ready.
- Cover the cooled poppycake with a brush (or pour over the slightly frozen icing).
- Decorate the Christmas poppy seed cupcake as desired (e.g. chocolate crumb with candurin, pastry decorations).
