Christmas Cupcake with Tangerines

Christmas is very soon, and for me it’s not only a goose in apples, but also a Christmas cupcake;) The cupcake cooks very quickly, and the taste just melts in your mouth.

Ingredients

  • Butter – 150 g
  • Sugar – 125 g
  • Eggs – 3 pcs.
  • Flour – 125 g
  • Baking powder – 1 teaspoon
  • For filling:
  • Mandarins – 2 pcs.
  • Dried fruits – 150 g
  • Butter – 20 g
  • Sugar – 1 teaspoon

Directions

  1. Peel the tangerines, disassemble into slices and leave for an hour to dry the film on the slices. Soak dried fruits in boiling water for 30-40 minutes.
  2. Heat the filling butter (20 g) in a skillet over high heat, sprinkle with a spoonful of sugar and fry the tangerine wedges (a few minutes on each side).
  3. Remove the hot slices on a plate to cool.
  4. Put dried fruits in a frying pan and heat. Then cool it down.
  5. For the dough, beat the butter and sugar, mix them well with a mixer.
  6. Add three eggs one at a time, whisking the cream each time. Add flour sifted with baking powder.
  7. Then add the cooled dried fruits with tangerines, mix gently.
  8. Place the dough in a greased pan.
  9. Bake at 180 degrees for about an hour, checking readiness with a toothpick (it should come out dry from the middle of the cake).
  10. Cool and slice. Enjoy your meal;)
