Chrysanthemum Pie with Potatoes and Minced Meat

Nice and delicious cake! The yeast dough turns out to be excellent, the filling is our favorite: potatoes and meat (minced meat). And the pie is interestingly formed. I liked the recipe very much, be sure to try it!

Ingredients

For the dough:

  • Flour – 500 g
  • Milk – 200 ml
  • Butter – 80 g
  • Dry yeast – 1 teaspoon
  • Egg – 1 pc.
  • Sugar – 1 tbsp
  • Salt – 1/2 teaspoon

For filling:

  • Potatoes – 300-400 g
  • Minced meat – 400 g
  • Fresh greens – to taste
  • Salt to taste
  • Ground paprika – to taste
  • Seasoning for meat – to taste

To grease the dough:

  • Yolk – 1 pc.
  • Milk – 1 tbsp

Directions

  1. We heat the milk to 36-37 degrees.
    Sift the flour.
  2. Let’s check the yeast for performance. To do this, pour the flour into a larger cup. We make a depression in the flour and pour warm milk, sugar and yeast into it.
  3. We mix milk with yeast and sugar, capturing part of the flour. Leave it for a couple of minutes to activate the yeast. Here is such a quick dough.
  4. Then add salt and an egg to the cup.
  5. Knead the dough for a few minutes.
    Lightly melt the butter and add it to the dough last.
  6. Stir the butter into the dough for a few minutes.
    The dough turns out to be soft and buttery, I love this dough very much.
  7. Put the dough into a cup. Cover the cup with a lid (foil) and let the dough rise in a warm place for 40-60 minutes.
  8. While the dough is steaming, we will prepare two types of filling: mashed potatoes with herbs and minced meat with spices.
    Peel the potatoes and cook in salted water until tender.
    Finely chop the greens.
  9. While the potatoes are hot, add greens to it and knead with a crush in mashed potatoes. If desired, you can add a little butter to the puree.
    For the second filling, add salt, seasoning for meat and paprika to the minced meat, mix well.
  10. The dough has moved away.
  11. Slightly knead the dough and divide into 27 equal parts, I got 30 grams each. Round each piece of dough.
  12. Cover the blanks with plastic wrap on the table, let them stand for 10 minutes.
  13. Roll each piece of dough into a small cake. Put the filling in the center of the tortillas, alternating between potatoes and minced meat. Fold the stuffed cake in half. Then we connect the two pointed tips and pinch slightly from below, forming curl ears.
    We pinch one cake with a filling in a special way: we visually divide the cake into 4 parts and form 4 ears, pinching the edges of the cake to the center.
    I got 11 curl ears each with potatoes and minced meat, as well as one blank with potatoes for the center of the pie.
  14. We prepare a baking dish (I have a ceramic one, 28 cm in diameter). To make it easier to remove the finished cake from the mold, cut out a circle along the dia of the mold and wide long strips from the parchment – lay out the strips in a criss-cross shape, and place a circle of parchment on top.
    We put all the ears-curls from the dough with filling in the prepared form, alternating with potatoes, with minced meat, etc.
    Four koloboks and a little minced meat were not needed, so it is better to take a larger baking dish.
  15. Cover the mold with plastic wrap and let the cake rise for 20-30 minutes.
    Lubricate the dough with yolk mixed with milk.
  16. We send the mold to the oven (we place the ceramic mold in a cold oven).
    We bake a pie with potatoes and meat at 180 degrees for 40 minutes.
  17. We take the cake out of the mold and serve.
