Ciabatta, Chicken Fillet and Vegetable Sandwiches Ingredients

  • Dried Italian Herb Blend – 1 teaspoon
  • Salt – 0.25 teaspoon.
  • Ground black pepper – 0.25 teaspoon.
  • Chicken fillet without skin – 450 g
  • Onions (cut into strips) – 1 pc.
  • Fresh champignons (cut into slices) – 230 g
  • Garlic (chopped) – 2 cloves
  • Canned tomatoes without skin (cut into cubes) – 400 g
  • Red wine vinegar – 2 tbsp
  • Zucchini (sliced) – 1 pc.
  • Bulgarian pepper (cut into strips) – 1 pc.
  • Mayonnaise – 0.3333 cup
  • Pesto sauce – 2 tbsp
  • Ciabatta bread (cut in half) – 1 pc. (30 cm)
  • Fresh basil leaves for serving

How to make chicken sandwiches:

  1. In a small bowl combine salt, pepper, and Italian herbs. Grate chicken fillet with this mixture on all sides. Place the chicken in a slow cooker. Put onions, mushrooms, and garlic there.
  2. In a bowl, combine chopped tomatoes and vinegar, pour this tomato mixture over the contents of a slow cooker.
  3. Close the slow cooker and cook the chicken on low power for 4-5 hours or on high power for 2-2 1/2 hours. Then add the zucchini and bell peppers to the slow cooker. Cook on high power for 30 minutes.
  4. Meanwhile, in a small bowl, combine mayonnaise and pesto sauce and apply this mixture to the ciabatta slices.
  5. Put the chicken fillet on a cutting board, and put the vegetables on the prepared main ciabatta cake. Cut the chicken fillet into slices and put on top of the vegetables, garnish with basil leaves, cover with the second half of the ciabatta, and cut the chicken sandwich into 6-8 servings.
