Classic Beef Stroganoff

Ingredients

         For beef stroganoff:

  • Beef (pulp) – 450 g
  • Onions – 150 g
  • Sour cream – 100 g
  • Tomato paste – 30 g
  • Butter – 20 g
  • Vegetable oil – 2-3 tbsp
  • Wheat flour – 1.5 tbsp
  • Salt to taste
  • Ground black pepper – to taste

    For puree:

  • Potatoes – 1.2 kg
  • Butter – 20 g
  • Salt to taste

Directions

  1. We prepare products for making beef stroganoff with mashed potatoes.
    Also, in the cooking process, we need cling film.
  2. We wash the meat thoroughly, wipe it with a paper towel and wrap it in cling film.
  3. We put the meat on the board and beat it off with a rolling pin from all sides.
  4. Cut the meat into 1 cm thick pieces
  5. Then we cut each piece across the fibers into thin strips.
  6. Peel the onion and cut it into small cubes.
  7. Heat vegetable oil in a frying pan (1-2 tablespoons), then put butter in it, melt it.
  8. Put onion in a frying pan and fry for 5-7 minutes until golden brown. Then we transfer it to a plate.
  9. Roll the meat strips in flour.
  10. Heat the remaining vegetable oil in a frying pan and spread the pieces of meat. Do not stir the meat, it will let the juice out. Simmer in your own juice for about 10 minutes.
  11. At this time, peel the potatoes and cut them into arbitrary pieces.
  12. Rinse and fill with water, boil until tender (20 minutes after boiling). During the cooking process, add salt to the water.
  13. We periodically begin to mix the meat, making sure that it does not burn, but fried from all sides.
  14. Then salt and pepper the meat, put bay leaves, fried onions, sour cream and tomato paste. Simmer the meat over low heat for 10-15 minutes.
  15. Drain the liquid from the finished potatoes (leave 1 cup of liquid to adjust the consistency of mashed potatoes we need). With the help of a crush, crush the potatoes, if necessary, return a little liquid to the potatoes. Put the butter and knead it again.
