  • Cookies (any crumbly) – 300 g
  • Cream cheese (ricotta; ideally Philadelphia) – 500 g
  • Cream 35% – 200 g
  • Chicken eggs – 4 pcs.
  • Butter – 100 g
  • Sugar – 5 tbsp
  • Lemon (for zest) – 0.5-1 pcs.
  • Vanillin – 1 sachet (to taste)

For decoration (optional):

  • Powdered sugar
  • Fresh berries (strawberries)

  1. Grind the cookies until crumbly. Melt the butter in a water bath.
    Stir the cookies with 1 tablespoon. a spoon of sugar, add butter, mix thoroughly.
  2. Line a baking dish (my dish is 22 cm in diameter) with parchment paper. From the resulting mass, make a cheesecake base in a baking dish and place it in an oven preheated to 170 degrees for 10 minutes.

  3. While the crust is in the oven, prepare the cheese filling. To do this, beat eggs with 4 tablespoons of sugar, add heavy cream, vanillin, and zest of half a lemon.
  4. Add cream cheese to the resulting mass and beat everything well with a whisk until a homogeneous consistency is obtained.
  5. Pour the resulting cheese mass (rather liquid) onto the prepared base and place in the oven. Attention! The cheesecake should be cooked in an oven in a water bath at a temperature of no more than 150 degrees for 70-80 minutes.

  6. Put the finished cheesecake in the refrigerator for several hours, or better overnight. Garnish the cheesecake (such as icing sugar and fresh strawberries) before serving and remove it from the pan.
