Preheat the oven to 160 ° C fan oven. Mix the flour, baking powder, coconut flakes and salt in a bowl. Mash the banana, beat in another bowl with the egg, oil, coconut milk and sugar until frothy and fold in the flour mixture. Fill the dough into molds and bake for about 20-25 minutes.
Let the muffins rest for 5 minutes, then remove them from the molds. Let cool on the wire rack and decorate as you wish.
