Recipe for light coconut cookies that are made without the addition of flour, butter, or margarine. The cookies are very tasty and airy.
Ingredients
Coconut chips – 100 g
Egg white – 1 pc.
Sugar – 80 g
Vanilla sugar – 10 g
Chocolate – optional

Pour water into a saucepan. We put it on fire and bring it to a boil. We put a bowl in the water. Put the egg white in a bowl, add 80 grams of sugar, and, constantly stirring with a whisk, bring it to a temperature of 60 degrees. We remove from the fire.
Pour 100 grams of coconut crumbs, 10 grams of vanilla sugar into a separate bowl, add the prepared protein with sugar and mix well.
Using an ice cream spoon, 3 centimeters in diameter, shape the cookies and place them on a baking sheet lined with baking paper. Leave for one hour to dry the cookies.
An hour later we bake coconut cookies in a preheated oven at 190 degrees for 10-12 minutes.
Remove the finished coconut cookies from the oven and cool. You can glaze the cookies with chocolate half or all. To do this, melt the chocolate in a water bath or in a microwave oven, dip the cookies in chocolate, put them on baking paper, and let the chocolate harden.
