Ingredients

  • 75 g desiccated coconut
  • 100 g butter
  • 120 g suar, brown
  • 1 egg (s)
  • 2 teaspoons grated lemon zest
  • 1 packet vanilla sugar
  • 100 g wheat flour type 405
  • 75 g whole wheat flour
  • 2 teaspoons baking soda
  • 1 pinch salt

Instructions

  1. Preheat the oven to 180 ° C. Line 2 trays with baking paper.
  2. Briefly toast the coconut flakes in a pan without fat.
  3. Mix butter, sugar and vanilla sugar until creamy. Add the egg with the lemon zest. Mix the flour, whole wheat flour, baking powder, roasted coconut flakes and salt and stir into the butter and egg mixture.
  4. Form small piles of dough with a teaspoon and place on the tray. Bake in the oven for about 15 minutes.
