Ingredients

  • 150 g dried fruit, your choice - preferably one variety
  • 150 g rice, does not have to be rice puddin
  • 80 g almond (s), toasted
  • 400 ml coconut milk, creamy
  • 600 ml water
  • 300 ml orange juice
  • cinnamon
  • 2 orange (s)
  • 1 tablespoon orange blossom water, (or 2) OR:
  • Rose water

Instructions

  1. Cut the dried fruit into small pieces, chop the almonds and roast them. If you only take one type of dried fruit, the aroma of the fruit can be tasted more. In principle, you can also use a mixture. Bring the coconut milk, half to two thirds of the water and the orange juice to a boil in a high saucepan. Sprinkle rice slowly. Cook the rice for 30-40 minutes, stirring occasionally. Now and then add a little water, regulate the heat. After 10 minutes stir in the dried fruits and almonds. Continue cooking and stir every now and then. The rice does not need any additional sweetener. The dried fruits give the sweetness. The almonds give you a bite. If the rice is well done and creamy, it can cool down a bit, then the orange blossom water / rose water can be stirred in or cinnamon can be mixed in. Spices like vanilla or tonka bean also go very well. Peel the oranges and cut into fillets and place on the serving bowls before serving. If the rice is very swellable, the recipe is also sufficient for 6 servings.
