Ingredients

  • 2 tablespoon water, warm
  • 2 teaspoons coffee, more soluble
  • 2 tablespoon flaxseed meal
  • 3 banana (s), very ripe
  • 1 pinch vanilla pulp
  • 3 tablespoon coconut oil or coconut fat, melted
  • 180 ml plant milk (plant drink) (cashew, soy or almond milk)
  • 200 g whole wheat flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 150 g oat flakes, crunchy
  • 2 tablespoon oat flakes, crunchy for sprinkling
  • 50 g chocolate, vean
  • some coconut oil for the pan, melted

Instructions

  1. Dissolve the coffee in the water. Puree the bananas. Add all liquid ingredients and mix. Mix whole wheat flour, oat flakes, linseed, salt, cinnamon, pulp of the vanilla pod and baking powder in a bowl, mix with the liquid ingredients and make a batter. Finally chop the chocolate and fold in.
  2. Grease a loaf pan with melted coconut oil and add the batter. Sprinkle with oatmeal. Bake at 180 degrees in a preheated oven for about 50 minutes.
