Ingredients

  • 3 egg (s)
  • 3 small tomato (s)
  • 1 large onion (s)
  • 0.5 ½ bunch coriander greens, fresh (alternatively parsley)
  • salt and pepper
  • oil

Instructions

  1. Peel the onion, cut into rings and fry in the hot oil in a pan until light brown. Then add the diced tomatoes and the coarsely chopped coriander leaves, season with salt. Steam for 10 minutes until the tomatoes are soft. Beat eggs and pour over the mixture. Stir and let the egg freeze over not full heat. Stir again and again and don`t let it burn.
  2. Grind the pepper over it before serving. This is the traditional breakfast in Colombia.
  3. You can also replace the coriander leaves with parsley.
