Ingredients

  • 125 g iant beans, colored

For the sauce: (vegetable and tomato sauce)

  • 1 onion (s)
  • 3 clove (s) garlic
  • 1 tablespoon vegetable oil
  • 2 small kohlrabi or a large one with green
  • 3 large carrots with green
  • 1 packet tomatoes, 500 g each
  • 150 g water
  • salt and pepper
  • sugar

Instructions

  1. Soak the giant beans overnight, then drain and discard the soaking water. Now cook the beans in enough water for 1 - 1.5 hours until they are cooked through.
  2. In the meantime, peel and dice the onion and garlic. Chop the kohlrabi and carrot greens. Peel and cut the kohlrabi and carrots.
  3. First sauté the onion and garlic in oil. Add the vegetables and sauté briefly. Now pour in the cooking water and cook everything until you want it to be firm to the bite. This takes about 20 minutes depending on the size of the pieces.
  4. Strain the vegetables and save the cooking water. Add the tomatoes and the chopped greens to the vegetables. Add enough of the cooking water until the consistency is good. Mix everything together, season to taste and heat. Drain the finished beans and add them.
  5. Serve the dish warm.
