Ingredients

  • 8 medium potato (s), waxy
  • 1 red pepper (s)
  • 1 bell pepper (s), yellow
  • 2 zucchini
  • 1 medium aubergine (s)
  • 10 shallot (s)
  • 10 mushrooms
  • 6 tablespoon olive oil
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 teaspoon chilli powder or paprika powder, hot
  • 1 teaspoon salt and pepper

Instructions

  1. Boil potatoes as jacket potatoes, drain and set aside. Wash, clean and cut all types of vegetables, not too small, e.g. just cut mushrooms in half, peppers in 4 pieces, eggplant and courgette in thick slices, etc .. Quarter cooled potatoes with their skins.
  2. Put all the vegetables and the potatoes in a large plastic bag. Mix a marinade from the olive oil and all the spices, season to taste and also pour into the bag. Close the bag tightly and mix the vegetables with the marinade by gently moving the bag back and forth.
  3. Then place the marinated vegetables on a baking sheet and fry them in the preheated oven for about 20 minutes at 200 degrees until everything is crispy brown. I like to serve the oven vegetables as a side dish for grilling or simply as a vegetarian main course.
  4. The types of vegetables and spices can be varied according to taste.
  5. A green salad and a strong red wine go very well with this.
