Ingredients
- 1 cup quinoa, more colorful
- 1 packet feta cheese
- 1 packet cocktail tomatoes
- 1 cucumber (s)
- 1 lime (s)
- Chilli powder or chilli spice mixture
- olive oil
- salt and pepper
- 1 onion (s)
- 1 bunch parsley

- Prepare the quinoa according to the instructions and let it cool (I let it simmer in a little vegetable stock for about 20 minutes).
- Squeeze the lime, mix with a little olive oil, the chilli, parsley, salt and pepper. Cut the onion very finely and add it.
- Mix the cooled quinoa with the dressing. Now halve the tomatoes, dice the cucumber (I usually remove the inside so the salad doesn`t get mushy). Also dice the sheep`s cheese and carefully mix everything with the quinoa.
- You can eat the salad right away or let it sit a little longer. It`s something different, it`s very healthy, refreshing and delicious.
