Ingredients

  • 1 cup quinoa, more colorful
  • 1 packet feta cheese
  • 1 packet cocktail tomatoes
  • 1 cucumber (s)
  • 1 lime (s)
  • Chilli powder or chilli spice mixture
  • olive oil
  • salt and pepper
  • 1 onion (s)
  • 1 bunch parsley

Instructions

  1. Prepare the quinoa according to the instructions and let it cool (I let it simmer in a little vegetable stock for about 20 minutes).
  2. Squeeze the lime, mix with a little olive oil, the chilli, parsley, salt and pepper. Cut the onion very finely and add it.
  3. Mix the cooled quinoa with the dressing. Now halve the tomatoes, dice the cucumber (I usually remove the inside so the salad doesn`t get mushy). Also dice the sheep`s cheese and carefully mix everything with the quinoa.
  4. You can eat the salad right away or let it sit a little longer. It`s something different, it`s very healthy, refreshing and delicious.
