Ingredients

  • 100 g almond (s), peeled
  • 1 bunch coriander
  • 50 g cheese, (pecorino)
  • 2 cloves garlic)
  • 100 ml olive oil
  • salt and pepper

Instructions

  1. If there are no peeled fresh almonds at hand, put unpeeled almonds in boiling water for 30 seconds, drain and gently squeeze out of the shell.
  2. Puree the almonds with coriander, cheese, garlic and olive oil in a blender and season with salt and pepper.
