Ingredients

  • 100 g lamb`s lettuce
  • 1 tablespoon cranberries
  • 1 ½ tablespoon vinegar
  • 1 teaspoon poultry broth, or vegetable broth
  • 0.5 teaspoon ½ mustard
  • salt
  • pepper
  • sugar
  • 2 tablespoon olive oil, or sunflower oil
  • 25 g almond (s)
  • 1 ½ tablespoon sugar
  • 30 g bacon (belly), finely diced
  • Oil, to drain

Instructions

  1. Wash the lamb`s lettuce, dry it well and cut off the roots.
  2. For the salad dressing, mix the cranberries, vinegar, broth and mustard together, season with salt, pepper and a little sugar. Then stir in the oil with a fork or whisk.
  3. Roughly chop the almonds and roast them with a little oil in the pan, sprinkle the sugar over them and let them caramelize while turning constantly. Remove from the pan and roughly wipe the pan with kitchen paper.
  4. Put the lamb`s lettuce in a salad bowl and pour the sauce over it.
  5. Heat the oil in the pan again and leave the bacon out until it is crispy. Spread the bacon with the caramelized almonds over the salad.
  6. Garnish with a few blobs of cranberries and serve.
