Corn Salad with Rocket, Feta and Strawberries with Strawberry Vinaigrette

Ingredients

• 500 g lamb`s lettuce and rocket mixed, proportions accordin to taste
• 500 g strawberries
• 200 g feta cheese
• 3 tablespoon olive oil
• 3 tablespoon balsamic vinegar
• 1 teaspoon mustard
• 1 teaspoon jam, (strawberry jam) or honey
• salt and pepper
• Herbs, fresh, e.g., parsley or cress

Instructions

1. Wash the lettuce thoroughly and arrange on the plate. Crumble the feta cheese to the desired size and sprinkle over the salad. Wash the strawberries and remove the greens, quarter them and spread over the salad and feta. Mix together all the ingredients for the vinaigrette and pour over the salad. Add fresh herbs such as parsley or cress to taste.
2. The fruity salad is quickly prepared and a fresh starter or a summer side dish with a piece of meat, fish or grilled cheese.
