Ingredients

  • 100 g walnuts, chopped
  • 2 tablespoon sugar, lightly heaped
  • 150 g lamb`s lettuce
  • 500 g strawberries
  • 150 g oat cream cheese
  • 3 tablespoon oil
  • 2 tablespoon balsamic vinegar, dark
  • 1 tablespoon balsamic vinegar (Vincotto raspberry)
  • 1 teaspoon, heaped mustard (fig)
  • some salt and pepper

Instructions

  1. Chop the walnuts. Melt the sugar in a pan with a little water, stir in the walnuts and let them caramelize. As soon as the nuts begin to brown with the sugar, place on baking paper or prepared aluminum foil and let cool.
  2. Wash the lamb`s lettuce and pluck the roots. Arrange on two plates. Wash and halve the strawberries and spread on the salad. Shape the goat cream cheese into balls and place in the center of the salad. Scatter the cooled walnuts on top.
  3. Finally stir in the oil, balsamic vinegar, vincotto and fig mustard, season with salt and pepper and pour over the salad.
