Cottage Cheese Casserole with Banana and Kiwi

Do you want to transform the usual curd casserole with semolina so that a healthy dessert sparkles with new colors? Follow this wonderful recipe – add kiwi and banana slices to the curd! The sweetness of the curd mass and the sourness of kiwi go well with each other, and bananas give the curd casserole an appetizing exotic flavor.

Ingredients

  • Cottage cheese – 300 g
  • Banana – 1 pcs. (130 g)
  • Kiwi – 4 pcs. (230 g)
  • Kefir – 200 ml
  • Egg – 1 pc.
  • Sugar – 60 g
  • Semolina – 60 g
  • Baking powder – 0.5 teaspoon.
  • Powdered sugar (for serving) – 0.5 tbsp

Directions

  1. Combine cottage cheese, kefir, sugar, and egg in the bowl of a blender or food processor. Whisk the combined ingredients until a smooth curd mass is obtained.
  2. Transfer the resulting curd mixture to a bowl and add the semolina and baking powder. Stir and leave for 30 minutes for the semolina to swell.
  3. Peel the banana and cut it into slices. Peel the kiwi and cut it into slices as well. Transfer the kiwi and banana slices to the curd mixture. Gently stir in the fruit.
  4. Transfer the curd mass with fruit to a baking dish (I have a silicone mold with a diameter of 24 cm). Bake the curd casserole in an oven preheated to 180 degrees for about 40 minutes.
  5. Cool the finished cottage cheese casserole with bananas and kiwi. After the casserole has cooled, refrigerate for a couple of hours. Transfer the cooled casserole to a plate and sprinkle with powdered sugar.
  6. Slice the curd casserole into portions before serving. Serve as a dessert or for breakfast.
