Cottage Cheese Casserole with Pumpkin and Poppy Seeds

Cottage cheese casserole with pumpkin and poppy seeds is not just beautiful, it turns out to be very tasty and healthy. Pumpkin curd casserole can be served as a dessert, breakfast, or dinner. Pumpkin and poppy seeds will decorate the curd casserole and give it an extra flavor.

  • Pumpkin – 1 kg
  • Cottage cheese – 500 g
  • Confectionery poppy – 40 g
  • Eggs – 5 pcs.
  • Corn starch – 5 tbsp
  • Lemon – 1 pcs.
  • Sugar – 6-12 tbsp (to taste)
  • Sour cream 20% – 100 g
  • Butter – 30 g
  • Baking powder – 2 teaspoon
  • Water – 200 ml

Directions

  1. Wash the pumpkin, peel it from seeds, cut it into pieces together with the peel.
  2. Arrange the pumpkin slices on a baking sheet, skin side down. Brush each piece with melted butter and sprinkle with sugar (1 tablespoon).
  3. Cover the baking sheet with foil and place in the oven for 40 minutes. Bake the pumpkin in the oven at 190 ° C.
  4. Pour poppy seeds with 150 ml of boiling water, cover with plastic and let stand for 30 minutes. Then place in the microwave for 2 minutes, stir and put in the microwave again for 2 minutes. The poppy will absorb the water and swell. Place the poppy seeds on a fine sieve and let the remaining water drain. Using a fine grater, remove the zest from one lemon. Remove the pumpkin from the oven and cool, then peel each bite.
  5. Grind 600 g of baked pumpkin in the puree. Place 100 g of pumpkin puree in another bowl. In the remaining 500 g of pumpkin puree, add 2 eggs, 1 teaspoon of baking powder for dough, 1.5 tablespoon. tablespoons of sugar, 3 tbsp (with a slide) of starch and prepared lemon zest. To stir thoroughly.
  6. Put cottage cheese in a bowl, add 2 eggs, mix, then add 1.5 tablespoon. tablespoons of sugar, 2 tablespoon. tablespoons of starch, 1 teaspoon of baking powder, and prepared poppy seeds. Mix thoroughly to get a homogeneous dough.
  7. Grease a baking dish with butter and cover the bottom and sides with baking paper.
  8. Fill the form with cottage cheese and pumpkin dough: put a part of the pumpkin dough in the center of the mold, put a part of the curd dough on it, then again a part of the pumpkin dough, and so on.
  9. Gently shake the form from side to side. Place in an oven preheated to 180 ° C and cook the pumpkin-curd casserole in the oven for 35 minutes.
  10. Add 1 egg, 2 tablespoon. To the remaining 100 g of pumpkin puree. tablespoons of sugar, 100 g of sour cream and mix thoroughly until smooth.
  11. Remove the pumpkin-curd casserole from the oven and pour the cooked pumpkin sauce on top in an even layer, then return to the oven and bake at the same temperature for another 10 minutes.
  12. Cottage cheese casserole with pumpkin and poppy seeds is ready. You can serve the casserole with sour cream, jam, or jam.
