Cottage Cheese Muffins with Raisins

It is enough to add just a pack of cottage cheese to the dough, and ordinary muffins turn into airy desserts with a light curd aftertaste. Curd cakes with raisins are tender and tasty. It’s a pity, they are quickly eaten. The next day they were even tastier than fresh ones, hot and hot!

Ingredients

  • Cottage cheese – 200 g
  • Butter – 150 g
  • Eggs – 3 pcs.
  • Sugar – 150 g
  • Flour – 200 g
  • Baking powder – 1 teaspoon
  • Vanilla sugar – ½ teaspoon
  • Salt – 1 pinch
  • Raisins – 3 tbsp
  • Powdered sugar – 2 tbsp

Directions

  1. I prepare the necessary products.
  2. I put cottage cheese, sugar, butter at room temperature and eggs in a blender. I mix everything at low speed, gradually increase the speed.
  3. I transfer the curd mixture to a bowl, add a little sifted flour.
  4. I add baking powder, vanilla sugar and a pinch of salt. While stirring, add portions of the remaining sifted flour.
  5. At the end, I add the raisins, previously washed with hot water and dried with a paper towel.
  6. Mix the whole mass well until smooth.
  7. I spread the curd dough in portions in silicone molds. I don’t smear the forms with anything.
  8. To bake, I put the raisin muffins in the oven, preheated to 180 degrees, for 35-40 minutes. The baking time and temperature depends on your oven. I bake muffins until golden brown. I check the readiness of the cupcakes with a toothpick.
  9. I take out the finished curd cakes with raisins from the molds, sprinkle them with powdered sugar on top and serve them for tea.
