Rustic mashed potatoes – a delicious rustic dish. The potatoes for this recipe are boiled in their skins, then mixed with cream cheese, and lightly kneaded.
Ingredients
Pink potatoes – 350 g
Cream cheese – 3 tbsp
Butter – 1 tbsp
Green onion – 1 pc.
Salt – 1.25 teaspoon
Ground black pepper – 0.25 teaspoon
Bay leaf – 1 pc.
Directions
Wash the potatoes thoroughly with a brush, without peeling them. Chop the onion.
Put the potatoes in a saucepan, add bay leaves and 1 teaspoon of salt, pour water so that it is 2.5 cm higher than the potatoes.
Bring to a boil over high heat, then reduce heat and cook until potatoes are tender, 10-15 minutes.
Set aside 0.5 cups of potato broth, drain the rest. Remove the bay leaf. Set aside potatoes for 2 minutes.
At this time, melt the butter. Mix it with cream cheese. Add 2 tbsp of potato broth, 0.25 teaspoons of salt, pepper, onion.
Mash potatoes with a potato grinder. Add the cream cheese mixed with butter and knead again so that all the liquid is absorbed into the potatoes. If necessary, if the puree is dry, gradually add the remaining broth in 1 tbsp at a time.
