Ingredients

  • 300 g couscous, instant
  • 300 ml vegetable stock, hot
  • some chives
  • 3 carrot (s)
  • 1 onion (s)
  • Oil, for frying
  • 2 cloves garlic)
  • salt and pepper
  • Paprika powder
  • 3 egg (s)
  • possibly breadcrumbs

Instructions

  1. Put the couscous in a large bowl and pour the hot vegetable stock over it. Let it swell and stir from time to time.
  2. In the meantime, grate the carrots finely, peel and dice the onion, peel the garlic and cut into small cubes. Fry everything together briefly in hot oil and season with salt, pepper and paprika and allow to cool.
  3. When the couscous is well enough and the fried vegetables are cold, mix everything together. Whisk and stir in eggs. If the mixture is too moist, add a little more breadcrumbs. Shape the mixture into small patties and fry about 4-5 (depending on size) on each side in a pan with a little oil.
  4. This goes well with a mixed salad, (herb) cream cheese, sweet chili chicken sauce, herb quark.
  5. The patties are also very tasty when cold.
