Ingredients

  • 100 g couscous
  • 150 ml vegetable stock, hot
  • 1 handful rocket
  • 2 tablespoons oil
  • 2 tablespoon water
  • 0.5 bag ½ / s ready mix for salad dressing (spicy garden herbs)
  • 150 g cocktail tomatoes
  • 100 g feta cheese
  • 1 small onion (s), red
  • Black pepper from the mill

Instructions

  1. Put the couscous in a heatproof bowl and pour the hot vegetable stock over it. Let it soak for about 15 minutes.
  2. In the meantime, rinse off the rocket, wash and quarter the tomatoes and cut the feta cheese into small cubes. Peel the onion, cut in half and cut into fine slices. If you like, you can sweat it briefly before mixing it up. Personally, I like it better with raw onions, it adds a lot of flavor.
  3. Make a dressing from the ready-mixed mixture, the oil and the water. Now add this to the couscous and stir well. Mix in the remaining ingredients and season with freshly ground black pepper as needed.
  4. The recipe makes 2 decent servings, or 3 normal sized servings. Depending on whether and what you eat with it, you can still vary the quantities.
