Ingredients

  • 50 g couscous, instant
  • 100 ml vegetable stock
  • 0.5 ½ cucumber (s)
  • 1 tomato (s)
  • 3 spring onion (s)
  • 0.5 ½ bunch mint
  • 0.5 ½ bunch parsley, smooth
  • 1 tablespoon lemon juice, alternatively lime juice
  • 2 tablespoon olive oil
  • 1 pinch (s) sugar
  • Salt and pepper

Instructions

  1. Put the couscous in a bowl, cover with the hot stock and cover and leave to soak for approx. 5 minutes. Whisk the lemon juice with salt, pepper, a pinch of sugar and olive oil.
  2. Peel, halve, core and dice the cucumber and add to the sauce. Dice the tomatoes and mix with the cucumber. Cut the spring onions into thin rings and fold in.
  3. Finely chop the mint and parsley leaves and add them as well. Let it steep for about a quarter of an hour, season again to taste and serve.
  4. Goes very well with grilled meat, especially lamb or beef.
