  • 2 zucchini
  • 2 large bell peppers
  • 7 small tomato (s)
  • 1 small onion (s), optional
  • 1 cup couscous or bulgur
  • salt and pepper
  • Seasoning (s) to taste

Instructions

  1. Heat olive oil in the pan and fry 1 - 2 tablespoons of chopped onions in it.
  2. Chop the zucchini, halve the tomatoes, cut the bell pepper into small cubes.
  3. Mix the couscous or bulgur with twice the amount of hot water in a separate bowl and allow to swell.
  4. Put the zucchini in the pan and fry for 5 - 10 minutes. Then add peppers and tomatoes and fry briefly. Finally add the swollen couscous / bulgur, season with salt and pepper and season to taste.
  5. The dish has a very tomato flavor as the couscous absorbs the juice from the tomatoes.
  6. This is a vegan dish so far.
  7. If you would like to have meat as a non-vegetarian, you could e.g., add diced bacon, which should be sautéed with the onions at the beginning. If you want a different sauce, you can add some herbal cream cheese or cream. You can also add grated cheese.
  8. This is a very simple dish, well suited for students as it contains very few ingredients, is quick to prepare, but tastes good and is healthy.
