Ingredients

  • 400 g couscous
  • 2 tomato (s)
  • 1 carrot (s)
  • 1 onion (s), red
  • 0.5 ½ bunch spring onion (s)
  • 3 clove (s) garlic
  • 1 teaspoon coriander powder
  • salt and pepper
  • 4 tablespoon oil
  • 3 tablespoon white wine vinegar
  • some mint, chopped

Instructions

  1. Pour 400 ml of boiling salted water over the couscous and let it soak for 5 minutes. Then fluff with a fork and let cool. Finely dice tomatoes and carrots. Chop the onion and garlic.
  2. Mix everything, season with coriander, salt and pepper. Mix together oil, vinegar and ½ cup of hot water and mix in a bowl with the couscous and vegetables. Serve garnished with the mint.
