Ingredients

  • 400 g chanterelles, fresh
  • 2 apples
  • 1 medium onion (s)
  • 150 g ham, diced (Kat ham)
  • 200 ml sweet cream
  • salt
  • pepper
  • Oil, for frying
  • Parsley, chopped

Instructions

  1. Clean the chanterelles and wash them in floured water, then dry them well (dab or let dry).
  2. Peel and finely dice the onion and peel the apples, cut into eighths and then cut into small slices.
  3. Heat the oil in the roasting pan, add the ham and onions and sweat for a short time until translucent, then immediately add the prepared chanterelles, fry them briefly and now add the apples and sear them too. Season the whole thing with salt and pepper and deglaze with the cream. Let it steep a little on a low flame and refine with parsley just before serving.
  4. This is a wonderful accompaniment to spaghetti, boiled potatoes or puree, schnitzel and much more.
