Ingredients

  • 50 g cream cheese
  • 2 egg (s)
  • 0.5 tablespoon ½ coconut flour or desiccated coconut
  • 0.5 tablespoon ½ stevia
  • 0.5 teaspoon ½ cinnamon
  • 1 pinch (s) salt
  • 2 teaspoons butter
  • 100 g yourt, Greek
  • 100 g berries, fresh, e.., blueberries, strawberries, raspberries

Instructions

  1. Pancakes:
  2. Mix all ingredients, including the salt, until well combined (no lumps). Let the batter stand for a while until the bubbles have dissolved and in the meantime, heat the butter in a pan over medium heat.
  3. Add the batter to the pan for a pancake that is 12-14 cm. Bake on the first side for about 90 seconds, until golden brown at the bottom or easy to turn, then bake on the other side for a minute. Keep doing this until you run out of batter.
  4. Garnish:
  5. Mix the yoghurt with a good half of the berries, mash them a little if necessary. Serve the pancakes with the berry yogurt and top with the rest of the berries.
