Ingredients

  • 1 medium onion (s)
  • 2 bunch radishes, depending on size
  • 100 g double cream cheese
  • 100 g crème fraîche
  • 2 tablespoon butter
  • 0.75 liter ¾ chicken broth
  • 0.5 teaspoon ½ salt and pepper, freshly ground white
  • 1 pinch (s) cayenne pepper
  • 1 pinch nutmeg, freshly grated
  • 1 lemon (s), juice it

Instructions

  1. Peel the onion and chop finely. Carefully wash the radishes with the leaves, put some beautiful leaves aside. Puree the radishes with the remaining leaves, the cream cheese and the crème fraîche in a blender.
  2. Melt the butter in a soup pot and fry the onion until translucent. Stir in the radish puree and the chicken stock, bring the soup to a boil, cover and cook gently over low heat for 20 minutes.
  3. Cut the remaining radish leaves into narrow strips. Season the soup with salt, pepper, cayenne pepper, nutmeg and lemon juice, arrange and serve sprinkled with the radish leaves.
  4. This soup also tastes very good cold, it is also a pleasant snack on hot days, it is inexpensive and easy to make.
