Ingredients

  • 50 g mushrooms
  • 100 g mushrooms (forest mushrooms), fresh or dried
  • 500 ml broth
  • 3 tablespoon flour
  • 1 medium onion (s)
  • 1 clove garlic
  • 1 bunch parsley
  • salt and pepper
  • butter
  • some white wine or red wine
  • 200 ml cream
  • possibly thyme
  • possibly rosemary

Instructions

  1. Chop the onions, garlic and the cleaned mushrooms and fry them in the butter. Season with salt and pepper. Thyme and rosemary can also be added if desired.
  2. Dust with the flour. Deglaze with the broth and season with the wine. Possibly it can be rounded off with cream. Chop the parsley and sprinkle freshly over the soup. Serve immediately.
  3. Other mushrooms can also be used depending on your taste. Shiitake, for example, give the soup a special touch.
  4. All quantities given are only approximate guidelines. Personally, I cook the whole thing by feeling. Of course, dried mushrooms can also be used.
