Ingredients

  • 300 ml cream, sweet
  • 100 ml milk, 3.5%
  • 4 egg yolks
  • 180 g suar
  • 500 g peach (s), very ripe
  • 1 tablespoon lemon juice
  • 1 tablespoon sugar
  • 1 packet vanilla sugar

Instructions

  1. Put the cream together with the milk in a saucepan and heat, do not let it boil. Remove the saucepan from the hob, add the egg yolks and 180 g sugar and stir in with the whisk. Put on the stove again, but don`t let it boil. Stir until a creamy, thick mass is formed. Let the mixture cool down. It is best to put it in the refrigerator overnight.
  2. Peel and core the peaches. Put in a blender and puree together with the 1 tablespoon sugar and vanilla sugar.
  3. Mix the peach puree with the cream and egg mixture and place in the ice cream maker.
  4. If there are no more fresh peaches you can also use canned peaches. Then carefully adjust the amount of sugar, as the canned goods are already sugared.
