Ingredients

  • 200 g black beans
  • 1 ½ liters water
  • Oil for frying
  • 2 onions)
  • 2 garlic
  • 1 bell pepper
  • 2 cans tomato (s), peeled, 400 g each
  • 0.5 tube ½ tomato paste
  • salt and pepper
  • 0.5 teaspoon ½ cumin
  • 3 clove (s)
  • 0.5 teaspoon ½ cinnamon
  • 0.5 teaspoon ½ allspice
  • 1 chilli, depending on the degree spiciness
  • 2 tablespoon sugar or stevia or honey or sweetener
  • 0.5 teaspoon ½ smoked salt
  • 4 stalks coriander, freshly chopped

Instructions

  1. Soak the beans overnight and then cook in the pressure cooker for 40 minutes, do not add salt! Alternatively, canned beans can be used, which saves time. If you can`t get black beans, kidney beans can also be used.
  2. Chop onions and garlic, fry in oil, add beans, pour stock and add the spices. Add tomatoes, fill up with water if necessary. After 40 minutes, simmer with tomato paste and thicken. Finally sprinkle the coriander greens over it.
  3. You can also serve rice, flatbread, tortillas or just eat the stew.
